Vanilla Funfetti Cupcakes

To say that I love sprinkles would be an understatement. These light vanilla funfetti cupcakes are loaded with bright colored sprinkles. 

Sprinkles in baked goods make me happy so these cupcakes pretty much ensure pure bliss! You have to smile while eating these cupcakes, its almost hard not. Perfect birthday present material.

 If you’ve never had funfetti, it’s basically vanilla cake with rainbow sprinkles mixed into the batter.  The sprinkles melt in the oven so you’re left with dots of color throughout your cake.  The Cupcakes are then topped with a vanilla frosting and then garnished with additional sprinkles.

On first glance you think that these cupcakes just have a few sprinkles casually thrown on top, the real surprise is when you bite in to one and they are dotted inside the light vanilla sponge proving than sometimes simple works best.

  1. Vanilla Cupcakes
  2. 125g Caster sugar
  3. 125g Self raising flour
  4. 2 large free range eggs
  5. 125g Unsalted butter
  6. ¼ teaspoon of bicarbonate of soda
  7. 1 ½ tablespoons of milk
  8. ¼ teaspoon of vanilla extract
  9. Sprinkles as many you like!
Buttercream Icing
  1. 335g Icing sugar
  2. 150g Unsalted butter
  3. 1- 2 tablespoons of whole milk
  4. ¼ teaspoon of vanilla extract
  5. Sprinkles to top
  1. Preheat the oven to 180 degrees and line a muffin tin with the cupcake cases of your choice.
  2. Cream together the butter, sugar and vanilla.
  3. Next add the eggs one at a time making sure well combined before adding the second.
  4. Add the flour, bicarbonate of soda and milk and mix until combined and smooth.
  5. now add your sprinkles! add as many as you like there is no right or wrong here.
  6. Distribute the mixture between you cupcake cases.
  7. Bake for 18-20 mins until light and slightly golden
  8. Leave on a wire rack to cool whilst you prepare the buttercream.
For the buttercream
  1. Put all your ingredients in an electric mixer. Start to mix on a low speed, increasing the speed as the mixture starts to come together. The buttercream is ready when its light and fluffy.
  2. Pipe or spread your buttercream on to the cooled cupcakes.
  3. Add Sprinkles!
