Mocha Brownies

Brownies to me are an all year round bake. I love making them, eating them and the smell they fill the house with when baking them. So I decided to take my brownies to the next level and frost them! Rich, fudgy brownies topped with a fluffy cloud of buttery-sugar-espresso-ness. 

The perfect Sunday treat after i was woken up by my boyfriend and his friends stumbling in from a heavy night out at stupid o’clock. These brownie provides the ultimate combination for anyone who’s a fan of brownies or coffee, or if your just really tired and need a pick me up!

Mocha Brownies

Ingredients
  1. 185g unsalted butter
  2. 185g dark chocolate
  3. 85g plain flour
  4. 40g cocoa powder
  5. 100g milk chocolate
  6. 3 large eggs
  7. 275g golden caster sugar
Expresso frosting
  1. 150g Butter
  2. 350g icing sugar
  3. 2tsp expresso powder
  4. 1-2 tbsp milk
Instructions
  1. Preheat the oven to 180 degrees and line a 20cm tin.
  2. Put the butter and dark chocolate ( broken into pieces) in a bowl. Put over a pan of water on a low heat until the butter and chocolate have melted, stirring occasionally to mix them. Once melted remove from the heat.
  3. In a bowl add the sugar and eggs, mix with a mixer ( or with a hand whisk) until pale yellow and fluffy. This will take a few minutes.
  4. Pour the cooled chocolate mixture over the eggy mixture, then gently fold together with a rubber spatula.
  5. Next add the flour and coca and gently fold in, until combined.
  6. Chop the milk chocolate in to small pieces and stir through the fudgy brownie batter
  7. Pour the mixture into the prepared tin. bake for 25 minutes, NO MORE. they will look under baked, brownies always do! The brownie will have a shiny, papery crust and the sides are just beginning to come away from the tin.
  8. Leave the brownies in the tin until completely cool. Then its time to get your frost on!
Expresso frosting
  1. Add all the ingredients in to a mixer and combine until light and fluffy. make sure you scrape around the bowl after 1-2 minutes of mixing and give it another mix.
  2. Using a spatular cover the top of the brownie with a layer of the expresso goodness.
