I am a sucker for coconut especially when it is in cake and frosting form. I want to share this buttercream recipe with you as its both delicious and works well with a variety of cupcake flavours. I have topped vanilla cupcakes with this yummy buttercream, however this recipe works well with chocolate, raspberry or even lemon cupcakes.
These little cupcakes set the perfect christmassy scene as they have a snowy texture. Penguin cake picks can be found here
- 115g butter
- 60ml coconut milk
- 1 tsp vanilla extract
- 500g icing sugar
- 75g desiccated coconut
- Food colouring if you wish
- Beat together the butter, coconut milk and vanilla, and gradually add the icing sugar.
- Beat in the desiccated coconut. at this stage if you want to add food colouring do so.
- Simple as that!
- I have chosen to use spread the buttercream onto the cupcake as i was going for a snowy effect, but you could pipe this for a neat finish
